The Great Vegetable Soup of 2015

Hello friends!

As promised, here is the recipe to the soup I made all last week for my nasty cold. It is quite simple and can be spiced up however you deem appropriate. Bon appetit!

Ingredients:

1 cup cut and washed mushrooms

1 cup cut and washed broccoli

1 cup cut and washed peppers (pick whichever colors you like!)

1 cup cut and washed kale or spinach

1 cup cut and washed squash

1 tablespoon finely cut and washed asparagus

½ cup cut and washed celery

1 cup cut and washed tomatoes

Salt to taste

Pepper to taste

Turmeric

A few basil leaves

A few curry leaves

(meat if you want)

Traders Joe’s Chicken Broth

Minced ginger and garlic

Vegetable or olive oil

Directions

1. Add a tablespoon of oil to a small soup pot with the gas on medium. Add the garlic and ginger to sautée.

2. Once garlic and ginger is starting to brown, throw in all vegetables. Once they also are relatively cooked, pour broth into pot.

3.When the broth begins to boil, add salt, pepper, turmeric and some basil and curry leaves. You can also add any meat you would like now. I also had leftover rice or plain noodles at this step if I have any.

4. After it has boiled for 5-10 minutes, you’re good to go!

As you can see, there is a lot of room to add more ingredients you like. It works as a good stock soup.
